WHAT'S NEW

New Executive Chef + New Manager = New Palm Room

It’s unusual to find a true executive chef in such a small coastal setting, but the Palm Room at The Lighthouse Inn is pleased to announce Chef Resz’nay Skinner – our own culinary artist in the kitchen.

A gold medal winner at the Berlin Culinary Olympics, Chef Res has trained at the Culinary Institute of America and most recently served as Executive Chef at the Austin International Airport Hilton Hotel. Originally from New Orleans, she has also served as Executive Banquet Sous Chef at the Driskill Hotel in Austin and was one of 20 chefs representing the U.S. Armed Forces Culinary Arts Team. Chef Res is a member of the American Culinary Federation and Women Chefs and Restaurateurs.

New Restaurant Manager, Mark Lauer brings 22 years of restaurant experience to the Palm Room. Most recently as the Assistant General Manager at Ruby’s Diner in San Diego, California, Mark also served as Food and Beverage Controller at Morton’s of Chicago in Houston, Texas.

Some may also remember Mark’s own successful restaurant, the Plaza Café, in downtown New Braunfels, Texas. In addition, Mark has served as a consultant to McCormick and Schmick’s Seafood Restaurant in Houston.

So you do the math: with Skinner and Lauer, this adds up to more than just two new staff members! This equals improved, more consistent food, unique signature dishes, superior service and ultimately a better Palm Room for guests.

OTHER NEWS

Julia Bivins has been promoted from Director of Sales to Assistant General Manager. Julia has been with The Lighthouse Inn since its opening in June of 2003. Also with us since the beginning, Trudy Dexter was recently honored as Employee of the Year. Congratulations to both Julia and Trudy. They are both wonderful, dedicated members of our team.

The Lighthouse Inn also is pleased to announce the hiring of Terry Goad as the new Regional Director of Sales. Goad has spent more than 30 years in the group travel and incentive business, designing and operating sales incentive travel programs, conventions and sales meetings to clients such as Toyota, Shell Oil, Taco Bell, Honda and others. Terry will be “spreading the good news” about what a great place The Lighthouse Inn can be for corporate events!
